This is also discreetly wooded with an aromatic profile of white orchard fruit, zest, especially orange peel, and a touch of mineral reduction. The lilting but almost painfully intense flavors possess a gorgeous texture while delivering even better length on the very dry, balanced and coiled finale. This is excellent.
 
This is an exciting new domaine that owes its origins to Simon's grandfather Michel Colin (of Domaine Colin-Deléger), who split his domaine in two stages between his sons Philippe and Bruno (see both above). Simon's father Philippe has initiated the same approach and has gifted 9.30 ha of his domaine to Simon in the proportion of 6.3 ha in white and 3 ha in red. Breaking it down further, 40% will be in 1ers, 40% in villages and 20% in regional appellations. For 2022 he will have a Les Chaumées Clos St. Abdon but in 2021, the yields were so low that he combined the two parcels to make a blended Les Chaumées. Simon has had a varied apprenticeship as he worked with his father from 2014 to 2017 and then in South Africa, Adelsheim in Oregon and then 4 years with Domaine Sauzet (see below). He began a small négociant operation while he was at Sauzet and finally came to an agreement with his father to buy the building and equipment to begin on his own account with his father's vineyards. Colin is in the process of applying for organic viticulture certification. For the whites, he allows the must to 'break' (turn brown) followed by 100% barrel fermentation, mostly using the 350L format instead of the tradition 228L size where about one-third of it is new. While there is no lees stirring, Colin does however use a large quantity of lees as he likes the texture doing so imparts. The élevage typically lasts about 15 months and while he will fine the whites if necessary, they are never filtered. The two examples of Bourgogne are bottled using the Diam brand composite cork while the upper level whites are bottled under natural cork though with a diameter of 25mm instead of 24mm. As the scores and commentaries make clear, Colin is a real talent and it's rare to see a brand new domaine perform so well. If you can find the wines, don't hesitate as you're in for a treat.
