Paillard Aymeric is the winemaker behind La Vigne des Pères, specializing in crafting high-quality Saint Joseph wines. In the 2020 vintage of "Petit Père," Aymeric demonstrates his deep understanding of the Saint Joseph appellation in the Rhône Valley and his exceptional winemaking skills. He meticulously controls yields to ensure grape quality, avoiding the potential issue of overproduction that was common in the generous 2020 vintage across France. Aymeric employs traditional winemaking techniques, including partial whole-cluster fermentation (vendange entière) and "semi-carbonic" maceration, without the use of additives (sans intrant), and ferments in small vessels (mini vats and open-top barrels). The wine is aged in non-new barrels and demi-muids for two winters, preserving its pure flavors and terroir expression.
