Claymore Bittersweet Symphony Cabernet Sauvignon 2011

Claymore Wines was humbly established with small volumes of Grenache and Riesling from a  single vineyard in Penwortham.  Since then, the estate has grown to include additional varientals and 44 hectares across  three additional vineyards in Watervale. 

Across the different vineyards, there is an assortment of soil profiles and delightfully eclectic mix of new and old vines.  Some of Riesling vines are over eighty years old and great pride is taken to preserve the heritage and integrity of the vines to ensure continuous longevity.

Elegance and restraint are key to this wine. A big mouthful of black currant fruits is backed up by careful oak integration that delivers structure and depth. Savoury tannins are harmonious with the ever-present lashings of wild berries, liquorice and hints of leather and cedar.
